  • 8 oz Lo Mein noodles (fresh or dried) Follow package instructions for cooking.
  • 1 piece red bell pepper Chopped into bite-sized pieces.
  • 1 piece yellow bell pepper Chopped into bite-sized pieces.
  • 2 pieces carrots (thinly sliced) Provide a nice crunch.
  • 2 pieces green onions (chopped) Add freshness to the dish.
  • ¼ cup low-sodium soy sauce Control sodium content according to preference.
  • 1 tablespoon sesame oil Use for cooking the chicken and vegetables.
  • 3 cloves fresh minced garlic Adds flavor and aroma.

Preparation
  1. Gather your ingredients: Before starting, make sure you have everything you need. This allows the cooking process to go smoothly.
  2. Prepare the vegetables: Wash and chop the red and yellow bell peppers into bite-sized pieces. Slice the carrots thinly and chop the green onions. Set these aside.
  3. Cook the lo mein noodles: Follow the package instructions to cook your Lo Mein noodles until they are al dente, then drain and set them aside.
Cooking
  1. Heat your skillet or wok: Place a large skillet or wok on the stove over medium-high heat until hot.
  2. Cook the chicken: Add a little sesame oil, then sauté the chicken breasts until golden brown and fully cooked (about 6-8 minutes). Remove and set aside.
  3. Stir-fry the vegetables: In the same skillet, add more sesame oil if needed. Stir-fry the chopped bell peppers, sliced carrots, and green onions for about 3-4 minutes until tender but still crisp.
  4. Combine everything: Return the cooked chicken to the skillet, add the drained noodles, soy sauce, minced garlic, and any additional spices. Toss well to combine.
  5. Serve and enjoy: Serve the Chicken Lo Mein hot, with extra soy sauce on the side if desired.

Notes

For best results, always use fresh vegetables. You can customize the recipe by adding more veggies or adjusting the soy sauce to your taste.
