Ingredients
  

Main Ingredients
  • 3-4 pieces boneless, skinless chicken breasts
  • 8 oz Lo Mein noodles (fresh or dried) Use fresh for better texture.
  • 1 pieces red bell pepper Cut into bite-sized pieces.
  • 1 pieces yellow bell pepper Cut into bite-sized pieces.
  • 2 pieces carrots (thinly sliced)
  • 2 pieces green onions (chopped) For garnishing.
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Method
 

Preparation
  1. Wash and chop the vegetables: cut the red and yellow bell peppers into bite-sized pieces, thinly slice the carrots, and chop the green onions.
Cooking Noodles
  1. Cook the Lo Mein noodles according to the package instructions until al dente, then drain and set aside.
Cooking Chicken
  1. In a large skillet or wok, heat the sesame oil over medium-high heat. Sauté the chicken breasts for about 6-8 minutes on each side until golden brown and cooked through. Remove and set aside.
Stir-Frying Vegetables
  1. In the same skillet, stir-fry the chopped bell peppers, sliced carrots, and green onions for about 3-4 minutes until tender but still crisp.
Combining Ingredients
  1. Return the chicken to the skillet, then add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Mix everything well and heat through for an additional 2-3 minutes.
Serving
  1. Transfer Chicken Lo Mein onto bowls or plates. Garnish with chopped green onions or sesame seeds if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat before serving. Can be frozen for up to 2 months.
