Preparation
- Wash and chop the vegetables: cut the red and yellow bell peppers into bite-sized pieces, thinly slice the carrots, and chop the green onions.
Cooking Noodles
- Cook the Lo Mein noodles according to the package instructions until al dente, then drain and set aside.
Cooking Chicken
- In a large skillet or wok, heat the sesame oil over medium-high heat. Sauté the chicken breasts for about 6-8 minutes on each side until golden brown and cooked through. Remove and set aside.
Stir-Frying Vegetables
- In the same skillet, stir-fry the chopped bell peppers, sliced carrots, and green onions for about 3-4 minutes until tender but still crisp.
Combining Ingredients
- Return the chicken to the skillet, then add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Mix everything well and heat through for an additional 2-3 minutes.
Serving
- Transfer Chicken Lo Mein onto bowls or plates. Garnish with chopped green onions or sesame seeds if desired.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat before serving. Can be frozen for up to 2 months.
