  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup your favorite vegetables (like carrots, bell peppers, or onions) Chopped into bite-sized pieces
  • 2 cloves garlic, minced
Seasonings
  • 1 teaspoon dried Italian herbs (or herbs of your choice)
  • to taste salt and pepper
  • 1 tablespoon olive oil (optional) For added richness
  • 1 teaspoon paprika (optional)
  • as needed fresh parsley for garnish (optional)

Method
 

Preparation
  1. Wash and chop your vegetables into bite-sized pieces.
  2. Mince the garlic cloves.
Layering
  1. Pour 1 cup of chicken broth into the bottom of your crockpot.
  2. Lay the chicken breasts flat on top of the broth.
Adding Ingredients
  1. Scatter the prepared vegetables over the chicken breasts.
  2. Sprinkle minced garlic, dried herbs, salt, pepper, and paprika over everything.
  3. Drizzle with olive oil if desired.
Cooking
  1. Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Finishing Touches
  1. Remove the chicken from the crockpot and shred it using two forks.
  2. Return the shredded chicken to the crockpot and stir everything well.
  3. Allow to cook for another 15 minutes on low.
  4. Garnish with fresh parsley before serving.

Notes

For serving, pair with rice, pasta, or bread. Leftovers can be used in wraps or sandwiches. Adjust the seasoning to your taste and use fresh seasonal vegetables for the best flavor.
