  • 2 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 1 cup stuffing mix
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 cup mixed vegetables (peas and carrots) Feel free to use different vegetables.
  • Salt and pepper to taste
  • 1 tablespoon butter (for greasing the dish)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, chicken broth, cream of mushroom soup, milk, mixed vegetables, salt, and pepper. Stir until well combined.
  3. In a greased 9×13-inch baking dish, spread the chicken mixture evenly.
  4. Top with the stuffing mix, spreading it evenly over the chicken mixture.
Baking
  1. Bake for 30-35 minutes or until the stuffing is golden brown and the casserole is heated through.
  2. Serve warm and enjoy!

Notes

This casserole can be prepared a day in advance. For crispy topping, broil for a few minutes at the end of cooking. Can use rotisserie chicken for quicker prep.
