Ingredients
  

Casserole Base
  • 2 cups cooked chicken, shredded Use leftover chicken if available.
  • 1 box stuffing mix Choose a variety you enjoy.
  • 1 can cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables Optional; substitute with favorite vegetables.
Topping
  • 1/2 cup shredded cheddar cheese Feel free to use other types of cheese.
Seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, cream of chicken soup, and chicken broth. If using, add mixed vegetables.
  3. Mix everything together until well combined.
  4. Add the stuffing mix, stirring until fully integrated into the chicken mixture.
Cooking
  1. Grease a 9x13 inch baking dish and pour the chicken mixture into it, spreading it evenly.
  2. Sprinkle shredded cheddar cheese on top.
  3. Bake in the preheated oven for 30-35 minutes, or until heated through and the top is golden brown.
Serving
  1. Allow the casserole to cool for a few minutes before serving. Enjoy warm.

Notes

For meal prep, transfer leftovers to an airtight container. Can be reheated in the oven or microwave. For longer storage, freeze for up to three months.
