Ingredients
  

Cheese Mixture
  • 1 cup shredded mozzarella cheese Use freshly shredded for better melting
  • ½ cup grated Parmesan cheese Ensure it's finely grated for even coating
Coating
  • 1 cup panko breadcrumbs Panko gives a crunchier texture
Binding
  • 2 large eggs Beaten for dipping
  • to taste Salt and pepper Adjust according to preference
Garnish
  • to taste Fresh parsley Optional, for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the shredded mozzarella and grated Parmesan cheese.
  4. In a separate bowl, crack the two eggs and beat them with a pinch of salt and a dash of pepper.
Forming the Bites
  1. Take a small amount of cheese mixture and form it into golf ball-sized bites.
  2. Dip each cheese bite into the egg mixture, then roll it in the panko breadcrumbs.
  3. Arrange the coated bites on the prepared baking sheet with space in between.
Baking
  1. Bake for 15-20 minutes or until golden brown and crispy.
  2. Allow the bites to cool for a few minutes before serving.

Notes

Serve warm with marinara sauce, ranch dressing, or garlic dip. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispiness.
