Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, nutmeg, and salt.
- In a large bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until fluffy.
- Add the large egg and vanilla extract, mixing until well combined and smooth.
- Gradually add the dry ingredients into the butter mixture and stir until just combined, then gently stir in the apple cider.
- In another bowl, mix together the softened cream cheese and powdered sugar until smooth.
Forming Cookies
- Scoop about a tablespoon of the cookie dough, flatten it in your hand, place a small amount of the cream cheese filling in the center, then fold the dough around the filling and shape it back into a ball.
- Repeat this process until all cookies are formed.
Baking
- Place the cookie balls on the prepared baking sheet and bake for 10-12 minutes until the edges are golden brown.
- Remove from the oven and let cool on a wire rack.
Notes
Dust with powdered sugar for presentation. Store in an airtight container for freshness. Cookies can be frozen for up to 3 months.
