Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
Cookie Base
  • 1/2 cup unsalted butter, softened Let it sit at room temperature.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg At room temperature.
  • 1 teaspoon vanilla extract
  • 1 cup apple cider Use fresh for best flavor.
Cheesecake Filling
  • 8 oz cream cheese, softened Soften before mixing.
  • 1/4 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until fluffy.
  4. Add the large egg and vanilla extract, mixing until well combined and smooth.
  5. Gradually add the dry ingredients into the butter mixture and stir until just combined, then gently stir in the apple cider.
  6. In another bowl, mix together the softened cream cheese and powdered sugar until smooth.
Forming Cookies
  1. Scoop about a tablespoon of the cookie dough, flatten it in your hand, place a small amount of the cream cheese filling in the center, then fold the dough around the filling and shape it back into a ball.
  2. Repeat this process until all cookies are formed.
Baking
  1. Place the cookie balls on the prepared baking sheet and bake for 10-12 minutes until the edges are golden brown.
  2. Remove from the oven and let cool on a wire rack.

Notes

Dust with powdered sugar for presentation. Store in an airtight container for freshness. Cookies can be frozen for up to 3 months.
