Ingredients
  

Main Ingredients
  • 1 cup raw carrots, shredded Ensure they are washed and peeled.
  • 10 medjool dates Halved and pitted.
  • 1/2 cup raw pecans Freshly chopped.
  • 1/2 cup raw walnuts Freshly chopped.
  • 1/2 cup rolled oats Use gluten-free if needed.
  • 2 tablespoons chia seeds
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • a sprinkle of sea salt
  • Optional: Shredded coconut to cover
  • Optional: Plain Greek yogurt, creamy peanut butter (to serve)

Method
 

Preparation
  1. Wash and peel the carrots, then chop them roughly and shred them in a food processor. Set aside in a large mixing bowl.
  2. Halve and pit the medjool dates. In a food processor, add the dates, pecans, walnuts, cinnamon, ginger, and a sprinkle of sea salt. Process until finely chopped and well mixed.
  3. Pour the date-nut mixture into the bowl with the shredded carrots and stir to combine.
  4. Add rolled oats and chia seeds to the mixture, stirring until well combined. If the mixture feels dry, add a small amount of water for desired consistency.
Assembly
  1. Scoop portions of the mixture and roll them into bite-sized balls. Optionally, roll the balls in shredded coconut.
  2. Place the rolled bites on a baking sheet, leaving space between each. Freeze for at least 30 minutes to help them hold their shape.
Serving
  1. Once firm, serve the energy bites as is or with plain Greek yogurt or creamy peanut butter.

Notes

Soak dates in warm water if not soft. Use fresh ingredients for best flavor. Adjust sweetness with the number of dates. Experiment with add-ins like different nuts or seeds.
