  • 8 oz pasta Any pasta shape works, but shorter shapes are recommended.
  • 1 lb smoked sausage, sliced You can substitute with chicken or turkey sausage.
  • 1 piece bell pepper, diced Any color bell pepper can be used.
  • 1 piece onion, diced Yellow or white onion is preferred.
  • 3 cloves garlic, minced Fresh garlic gives the best flavor.
  • 1 can diced tomatoes Use canned tomatoes with juices.
  • 1 cup heavy cream For a lighter version, use half-and-half.
  • 1 cup shredded cheese Cheddar or a blend works well.
  • 2 tsp Cajun seasoning Adjust according to spice preference.
  • to taste Salt and pepper Use according to personal taste.
  • 2 tbsp Olive oil For sautéing.

Method
 

Preparation
  1. Begin by heating a large pot over medium heat. Add a couple of tablespoons of olive oil and allow it to warm.
  2. Once the oil is hot, add the sliced sausage and let it cook for about 3-5 minutes until it starts to brown.
  3. Add the diced bell pepper, onion, and minced garlic. Sauté until the vegetables become soft, approximately 5-7 minutes.
  4. Add the canned diced tomatoes along with their juices and sprinkle in the Cajun seasoning. Mix well and let it simmer for a few minutes.
  5. Pour in the uncooked pasta and enough water to cover it completely. Stir well and bring to a full boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 8-12 minutes, stirring occasionally.
  7. When the pasta is cooked, stir in the heavy cream and shredded cheese until the cheese melts and forms a creamy sauce.
  8. Taste the dish and adjust seasoning with salt and pepper as needed.
  9. Serve hot, optionally garnished with fresh parsley or green onions.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, adding a splash of milk if needed.
