Preparation
- Begin by heating a large pot over medium heat. Add a couple of tablespoons of olive oil and allow it to warm.
- Once the oil is hot, add the sliced sausage and let it cook for about 3-5 minutes until it starts to brown.
- Add the diced bell pepper, onion, and minced garlic. Sauté until the vegetables become soft, approximately 5-7 minutes.
- Add the canned diced tomatoes along with their juices and sprinkle in the Cajun seasoning. Mix well and let it simmer for a few minutes.
- Pour in the uncooked pasta and enough water to cover it completely. Stir well and bring to a full boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 8-12 minutes, stirring occasionally.
- When the pasta is cooked, stir in the heavy cream and shredded cheese until the cheese melts and forms a creamy sauce.
- Taste the dish and adjust seasoning with salt and pepper as needed.
- Serve hot, optionally garnished with fresh parsley or green onions.
Notes
If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, adding a splash of milk if needed.
