  • 2 cups all-purpose flour Spoon into measuring cup and level off for accuracy.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Reduce if using salted butter.
Wet Ingredients
  • 1 cup unsalted butter (softened) Ensure butter is softened, not melted.
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
Mix-Ins
  • 1 cup toasted pecans (coarsely chopped) Toast for 8-10 minutes before using.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Spread the pecans out on a baking sheet and toast them in the oven for about 8-10 minutes until fragrant.
  3. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar for about 3-5 minutes until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually combine the dry ingredients with the wet mixture using a spatula.
  7. Fold in the toasted pecans gently.
  8. Drop rounded tablespoons of dough onto lined baking sheets, spacing them apart.
Baking
  1. Bake for 10-12 minutes until the edges are lightly golden.
  2. Allow them to cool on racks before serving.

Notes

To store cookies, use an airtight container and separate layers with parchment paper. Cookies can be frozen for up to three months.
