Ingredients
  

For the Nachos
  • ½ pound lean ground beef
  • ½ cup diced yellow onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 2 tablespoons taco seasoning
  • 8 ounces Colby jack cheese, shredded
  • 12 ounces tortilla chips (Tostitos brand) Use about ⅔ of the bag
  • to taste sour cream, diced tomatoes, chopped fresh cilantro Optional garnishes

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. Spray a 12-cup capacity bundt pan with cooking spray.
  3. In a large skillet over medium-high heat, add the ground beef and diced onion. Sprinkle with salt and black pepper.
  4. Cook for about 6-7 minutes until the meat is browned and the onions are softened. Drain any excess fat.
  5. Stir in the water and taco seasoning. Cook for another 2-3 minutes until the liquid evaporates.
  6. Layer half of the shredded cheese, half of the cooked beef mixture, and about ⅓ of the tortilla chips in the bundt pan. Repeat with remaining cheese, beef, and chips.
Baking
  1. Place the bundt pan in the preheated oven and bake for about 10 minutes until the cheese is bubbly and starting to brown.
  2. Carefully remove the bundt pan from the oven and gently invert it onto a large heatproof plate.
  3. Garnish with optional ingredients and serve warm.

Notes

For extra flavor, add jalapeños or other toppings. Use leftover meats for variation. Store leftovers in an airtight container for up to 2-3 days.
