Ingredients
  

For the Marinade
  • 1/4 cup brown sugar (dark or light)
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 tablespoon apple cider vinegar (optional) for extra tang
For the Chicken
  • 4 large chicken thighs (bone-in, skin-on)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the brown sugar, Dijon mustard, olive oil, minced garlic, salt, black pepper, thyme, and apple cider vinegar. Whisk until well combined.
  3. Place the chicken thighs in a baking dish. Pour the marinade over the chicken, ensuring each piece is coated. Marinate in the refrigerator for up to 2 hours, or proceed to bake if short on time.
Cooking
  1. Once the oven is preheated, place the baking dish in the oven and bake for 25 to 30 minutes until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
  2. Remove the chicken from the oven and let it rest for 5 minutes before serving. Optionally, broil the chicken for an additional 2-3 minutes for extra crispy skin.

Notes

Serve with roasted vegetables, mashed potatoes, or a fresh garden salad. Leftovers can be shredded for use in sandwiches or salads.
