  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon

Wet Ingredients
  • 1/2 cup unsalted butter, softened at room temperature
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Add the egg and vanilla extract to the mixture and beat until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry mixture to the wet mixture and stir gently until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, leaving space between them.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
