Preparation
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the mixture and beat until smooth.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Gradually add the dry mixture to the wet mixture and stir gently until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet, leaving space between them.
Baking
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For variation, add nuts, chocolate chips, or dried fruit. Store in an airtight container for best freshness.
