Blueberry Overnight Oats

Ingredients
  

Oats Base
  • 2 cups rolled oats Use whole rolled oats for more health benefits.
  • ½ cup milk of your choice Can use almond milk or coconut milk for a dairy-free option.
  • 1 cup frozen blueberries These will be blended into the mixture.
  • 1 cup thick natural or Greek yogurt Choose a non-dairy yogurt for vegan option.
  • 2 tsp vanilla extract
  • 1-2 tsp maple syrup Optional for sweetness.
  • tsp salt
Toppings
  • 1 cup fresh blueberries Divided among jars for layering.
  • 80 g dark chocolate Melted and slightly cooled, optional for added flavor.
  • ½ tbsp coconut oil Optional to mix with chocolate.

Method
 

Preparation
  1. Gather your blender along with the ingredients.
  2. Place the rolled oats, milk, frozen blueberries, yogurt, vanilla extract, maple syrup (if using), and salt into the blender.
  3. Blend all the ingredients on high speed until smooth and creamy.
Assembly
  1. Divide the fresh blueberries among four jars or containers.
  2. Pour the blended oat mixture over the blueberries in each jar.
  3. If using, mix the melted chocolate with coconut oil, and pour over the jars.
  4. Seal the jars properly and place them in the refrigerator for at least 1½ hours, preferably overnight.
Serving
  1. Serve cold straight from the refrigerator, either in jars or transferred to bowls.
  2. Garnish with extra fresh blueberries or a drizzle of honey/maple syrup and sprinkle nuts or seeds on top.

Notes

These oats can last for about three days in the refrigerator. You can freeze them without toppings for longer storage.
