Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Add the egg and vanilla extract; mix until fully combined.
- In another bowl, whisk the flour, baking soda, and salt together.
- Gradually add the dry ingredients to the wet ingredients, stirring until a smooth dough forms.
- Wrap the dough in plastic wrap and chill for about 30 minutes.
- Take a tablespoon of dough, flatten it, place a dollop of Biscoff cookie butter in the center, and wrap the dough around it to form a ball.
- Place the cookie balls on a lined baking sheet and sprinkle sea salt on top.
Baking
- Bake the cookies in the preheated oven for 10-12 minutes until edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve warm or at room temperature. Store in an airtight container for up to one week at room temperature or freeze for up to three months.
