  • 3-4 pieces boneless, skinless chicken breasts Use fresh chicken for best results.
  • 1 cup barbecue sauce Choose a sauce according to taste preferences.
  • 6 cups chopped romaine lettuce Use fresh romaine.
  • 1 cup sliced cucumbers Fresh cucumbers add a nice crunch.
  • 1 cup halved cherry tomatoes Cut in half for better distribution in the salad.
  • ½ cup thinly sliced red onion Adjust amount based on taste preference.
  • 1 cup shredded cheddar cheese Can substitute with other cheeses if desired.
  • ½ cup ranch dressing Use your favorite dressing.

Preparation
  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
Grilling Chicken
  1. Grill the chicken for 6-8 minutes on each side until cooked through (165°F/75°C).
  2. Brush the grilled chicken with barbecue sauce and grill for an additional minute on each side.
  3. Remove the chicken from the grill and let it rest for a few minutes.
Assembling Salad
  1. Slice the chicken into strips.
  2. In a large bowl, combine the chopped romaine lettuce, sliced cucumbers, halved cherry tomatoes, thinly sliced red onion, and sliced chicken.
  3. Top with shredded cheddar cheese and drizzle ranch dressing over the top.
  4. Gently toss the salad and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 1-2 days. Keep the dressing separate to avoid sogginess.
