Bang Bang Salmon Bites

Ingredients
  

For the Salmon Bites
  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
For the Bang Bang Sauce
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust to spice level
  • 1 tsp honey optional
  • Juice of ½ lime
For the Bowls
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 each avocado (sliced)
  • ½ cup shredded carrots
  • 2 each green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) or set your air fryer to the same temperature.
  2. In a bowl, mix together garlic powder, smoked paprika, salt, and black pepper. Coat the salmon cubes with the seasoning.
  3. Place panko breadcrumbs in another bowl. Take each seasoned salmon cube and coat it with the breadcrumbs.
Cooking
  1. Place the breaded salmon bites in the oven or in the air fryer. If using the oven, bake for 12-15 minutes until they are golden and cooked through. If using an air fryer, cook for about 8-10 minutes.
Make the Sauce
  1. In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice.
Assembly
  1. In a bowl, place some cooked jasmine rice or cauliflower rice. Top with the crispy salmon bites, shredded purple cabbage, avocado slices, and shredded carrots.
  2. Drizzle the Bang Bang sauce on top and sprinkle with green onions, cilantro, and sesame seeds.

Notes

These salmon bites are best served fresh from the oven or air fryer. Reheat leftovers for a few minutes to get them crispy again before serving.
