Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, honey or maple syrup, eggs, baking powder, and vanilla extract. Mix until well combined.
- Grease an 8x8-inch baking dish or line it with parchment paper.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes until golden brown.
- Let cool for at least ten minutes before slicing into squares.
Notes
Can serve plain, with Greek yogurt, or nut butter. Store in an airtight container for up to three days at room temperature, or one week in the refrigerator.
