For the Cobbler
  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk Dairy-free option: use almond or coconut milk.
  • 1 teaspoon vanilla extract
  • 3 pieces ripe bananas, sliced Use very ripe bananas for the sweetest flavor.
For the Topping
  • ½ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ½ cup chopped walnuts or pecans (optional) Skip for nut allergies.
  • ½ cup chocolate chips (optional) Add for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Pour the melted butter into a 9×13-inch baking dish, tilting to spread evenly.
  3. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  4. Slowly pour the milk and vanilla extract into the dry ingredients, whisking until smooth.
  5. Carefully pour the batter over the melted butter in the baking dish without stirring.
  6. Evenly distribute the sliced bananas over the top of the batter.
  7. In a small bowl, mix the light brown sugar and cinnamon together, then sprinkle over the bananas and batter.
  8. Optionally, add chopped nuts or chocolate chips on top.
Baking
  1. Bake for 35 to 45 minutes until golden brown and bubbling. Check for doneness with a toothpick.
  2. Once done, let it cool for about 10-15 minutes before serving.
  3. Serve warm, optionally with vanilla ice cream or caramel sauce.

Notes

Store leftovers in the refrigerator for up to 3-4 days or freeze for 2-3 months. Can add variations like berries, peanut butter, or pumpkin.
