Stewing the Apples
- Heat a saucepan over low heat with 1 tablespoon of coconut oil or butter until melted.
- Add the diced apples and sprinkle with half a teaspoon of cinnamon, a pinch of salt, and 1 to 2 teaspoons of maple syrup.
- Cover and cook for about 10 minutes, stirring occasionally.
- Uncover and cook for an additional minute, until the apples are soft and tender.
- Set the stewed apples aside.
Preparing the Oats
- In a mixing bowl, combine the rolled oats, chia seeds, Greek yogurt, soya milk, 1 teaspoon of cinnamon, and vanilla extract.
- Mix well until combined, cover, and refrigerate overnight or for at least 2 to 3 hours.
Serving the Oats
- Scoop the oat mixture into a bowl and top with the stewed apples.
- Add a scoop of almond or cashew butter, drizzle with additional maple syrup if desired, and sprinkle with extra cinnamon.
