Ingredients
  

For the Stewed Apples
  • 1 tbsp coconut oil or butter (vegan option)
  • 2 pieces apples (peeled and diced, optional)
  • 1-2 tsp maple syrup
  • 0.5 tsp cinnamon
  • 1 pinch salt
For the Overnight Oats
  • 1 cup rolled oats
  • 1 tbsp chia seeds or ground flaxseed
  • 0.5 cup Greek yogurt (vegan option)
  • 1.5 cups soya milk (or milk of choice)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1-2 tbsp maple syrup (optional)
For Serving
  • Almond butter
  • Cashew butter
  • Additional syrup
  • Extra cinnamon

Method
 

Stewing the Apples
  1. Heat a saucepan over low heat with 1 tablespoon of coconut oil or butter until melted.
  2. Add the diced apples and sprinkle with half a teaspoon of cinnamon, a pinch of salt, and 1 to 2 teaspoons of maple syrup.
  3. Cover and cook for about 10 minutes, stirring occasionally.
  4. Uncover and cook for an additional minute, until the apples are soft and tender.
  5. Set the stewed apples aside.
Preparing the Oats
  1. In a mixing bowl, combine the rolled oats, chia seeds, Greek yogurt, soya milk, 1 teaspoon of cinnamon, and vanilla extract.
  2. Mix well until combined, cover, and refrigerate overnight or for at least 2 to 3 hours.
Serving the Oats
  1. Scoop the oat mixture into a bowl and top with the stewed apples.
  2. Add a scoop of almond or cashew butter, drizzle with additional maple syrup if desired, and sprinkle with extra cinnamon.
